A Fresh And Delicious Bite
Growing up, I remember eating cucumber sandwiches often. Mom would cut garden fresh cucumbers, spread some mayo on bread, and sandwich those slices with another slice of bread. I always loved the refreshing bite of a cucumber in that sandwich.
I don't eat as much bread as I used to, so making these Cucumber Appetizers was a great way to relive my cucumber sandwich in a low carb way. When I ate these appetizers, I realized it was the freshness of the cucumber that had me hooked. Everything else was a delicious bonus!
Smoked Salmon And Capers Without The Bagel
My daughter in love loves smoked salmon on a bagel with cream cheese and capers. The entire time she was pregnat she craved smoked salmon. So, since she did the work of bringing me a fabulous grandson, I decided to treat her with salmon, but do it the low carb way so I could join her!
Cucumbers are the perfect vessel for the cream cheese filling. I went with a combination of cream cheese, mayo, and sour cream and mixed in fresh dill to make it have a fresh flavor combination. These were a huge hit and even my not so much salmon loving son enjoyed these!
What You Need To Make Stuffed Cucumbers
English Cucumbers, these are long slender cucumbers with underdeveloped seeds that are easy to scoop out of the center of the vegetable.
Cream Cheese
Mayonnaise
Sour Cream
Fresh Dill
Red Onion
Smoked Salmon
Capers, which are pickled flower buds, bring all those flavors together.
Tips and Substitutions
- Cut the cucumber in half, then use a regular tablespoon to scoop out the center of the english cucumber.
- When filling the cucumbers, place a sandwich baggie in a glass much and transfer the cream cheese mixture to the baggie. Snip an end off the corner of the baggie and pipe the stuffing into the hollowed out cucumber.
- Add a couple of teaspoons of dry ranch dressing or Italian dressing.
- Instead of cutting the cucumber in half, cut them in slices and spread the cream cheese mixture on top then top with the toppings.
- Instead of topping the cucumber appetizers with salmon, cut the salmon up in pieces and stir it into the cream cheese mixture to stuff the cucumber with.

Stuffed Cucumbers with Salmon and Capers

Ingredients
- 2 english cucumbers cut in half and seeds removed
- 4 ounces cream cheese
- ¼ cup sour cream
- 2 tablespoon mayonnaise
- 2 tablespoon fresh dill
- 2 tablespoon lemon juice freshly squeezed
- ¼ black pepper
- 4 ounces smoked salmon
- ¼ cup red onion diced
- ¼ capers drained
Instructions
- In a large mixing bowl, using an electric mixer, blend together the cream cheese, sour cream, mayonnaise, dill, lemon juice, and pepper until creamy.
- Transfer the cream cheese mixture to a piping bag. Pipe evenly into each cucumber boat.
- Top each cucumber bite evenly with smoked salmon, red onion, and capers.
