    These Air Fryer Pulled Pork Taquitos are a great way to use up leftover pulled pork! The pulled pork filling has tons of flavor along with a touch of lime, salsa verde, and cilantro. Serve with a dollop of sour cream for a delicious treat you can serve on game day.

    A great use for leftover meat: I like to make a pulled pork dinner, then with the leftovers make these delicious homemade taquitos for another meal.

    They are a healthier snack food: This air fryer taquitos recipe is a great way to enjoy fried foods without the excess grease! . The air fryer does the work of crisping the tortillas up without the use of a deep fryer.

    You can add them to your Taco Tuesday menu: fans of Mexican food will be happy to see these taquitos on the menu!

    Ingredients for pulled pork taquitos.
    Just a few ingredients make the most delicious flavorful air fryer taquitos.
    Sauteed onions in a skillet.
    Saute onions until translucent.

    🥘 Ingredients

    Leftover pulled pork: I like to make this Instant Pot Pork Tenderloin and use leftovers from it to make these taquitos.

    Olive oil: used to saute the onion and spices.

    Onion: white or yellow onion

    Cumin: this adds great flavor without heat.

    Chili powder: use traditional or chipotle chili powder.

    Oregano: added for flavor

    Lime juice: the acid really accents the spices and brightens the pork filling up.

    Salsa verde: This is a green salsa. I love Herdez brand, the mild salsa has just enough heat to make me happy.

    Cheese: I used a Mexican cheese blend that was pre-shredded.

    Flour tortillas: traditionally corn tortillas are used, and I did try them, but the tortillas I bought in the store fell apart too easily so I switched to flour.

    Sour cream: for dipping

    Cooking spray: used to brown and crisp the tortilla shells

    Sauteed onions with cumin, chili powder, and oregano.
    Add spices and cook with onions for 1 minute.
    Pulled pork, salsa verde, and cilantro in a skillet.
    Warm the leftover pulled pork up in the skillet to make it easy to work with.

    🔪 Instructions

    1. Heat olive oil in a large skillet over medium high heat until hot. Add the onions and cook for 3 minutes, until softened.
    2. Stir in the ground cumin, chili powder, and oregano. Cook for 1 minute.
    3. Stir in lime juice and salsa verde. Add the pulled pork and toss to coat. Cooking for 2 minutes to heat pork.
    4. Remove pork mixture from the heat and stir in the cheese. Set aside.
    5. Wrap tortillas in a cotton towel and warm in the microwave for 40 seconds.
    6. Place 1 tortilla on a work surface and place approximately 2 tablespoons of filling in the bottom third of the tortilla. Tightly roll up the tortilla, tucking the filling in as you go. Place taquito seam side down in the air fryer basket or tray leaving space between each taquito to allow the hot air to circulate around the taquito.
    7. Repeat with remaining tortillas. Note: you will need to cook tortillas in batches.
    8. Air fry taquitos at 400 degrees for 5-6 minutes, until golden brown.

    Large skillet

    Air Fryer

    Flathead wooden spoon:

    Tablespoon: to measure out the pork filling.

    Pulled pork mixture for taquito filling.
    Add the cheese to the pork mixture after it is removed from the burner.
    Pulled pork filling on a flour tortilla.
    Place the pulled pork on the bottom third of the tortilla, then tightly roll it up.

    🥫Storage

    Refrigerate: store leftover taquitos in an airtight container in the fridge up to 4 days.

    Freeze: you can freeze uncooked taquitos in an airtight container in the freezer up to 3 months. Taquitos may need to cook a minute or two longer from the frozen state.

    Reheat: to reheat taquitos, place in air fryer on reheat setting (350 degrees) for 5 minutes, until warmed through.

    📖 Variations

    • Use your favorite bbq sauce in place of the salsa verde
    • Substitute greek yogurt for the sour cream
    • Use cheddar cheese or pepper jack cheese
    • Sprinkle queso fresco on the tops of the taquitos before serving
    • Red enchilada sauce or barbecue sauce can be substituted for the salsa verde

    Roll the taquitos tightly and place seam side down in the air fryer basket or tray.

    ♨️ Oven Instructions

    To bake the taquitos in an oven, spray a baking sheet with cooking spray and place taquitos seam side down on the baking sheet. Spritz the tops of taquitos with cooking spray and bake for 30 minutes, until tortillas are golden brown.
