🥘 Ingredients
Pork tenderloin: I used a pre-seasoned garlic and herb pork tenderloin. If using one that is not pre-seasoned, be sure to season with any of your favorite seasonings.
Olive oil: added to the hot pot to sear the outsides of the tenderloin before pressure cooking.
Beef broth: I like a darker broth so I use beef stock, however, feel free to use chicken broth if desired.
Cornstarch: to thicken the stock the tenderloin was cooked in to make a gravy.
🔪 Instructions
- Use the instant pots sauté function to sear the pork. Add the olive oil and heat until instant pot indicates it is hot.
- Place the pieces of pork tenderloin in the pressure cooker and sear for 2-3 minutes on each side, until all sides have browned. Transfer pork from instant pot to a plate and set aside.
- Add the onion to the instant pot and saute for 3 minutes, until onions are softened. Be sure to scrape any browned bits from the bottom of the pot with a flathead wooden spoon. Press cancel on the instant pot to turn off the saute setting.
- Carefully add the beef broth to the instant pot and deglaze the bottom of the pot. Place the lid on the pot and turn the steam valve to the sealing position. Press the manual setting and set the timer for 3 minutes on high pressure.
- Once the 3 minutes are up, the instant pot will beep. Allow the instant pot to do a natural release for 15 minutes. (timer will automatically start on instant pot).
- After the natural pressure release, turn pressure valve to the venting position to allow a quick release of remaining pressure. Remove the pork from the pot and place on a plate tented with foil. While pork rests, make the gravy.
- Turn the instant pot on the sauté setting and bring the broth in the pot to a boil. Place the cornstarch and water in a small bowl and stir to combine.
- Once the broth is boiling, using a hand whisk, add the cornstarch slurry to the broth, whisking constantly. Cook for 1 minute, until gravy thickens.

Instant pot: to cook the pork recipe

Flathead wooden spoon: to stir onions and scraping browned bits from bottom of the pot.
Cutting board: where the pork will rest after cooking and for slicing or shredding
Hand whisk: to whisk the cornstarch slurry into the broth mixture to make gravy
Meat thermometer: to check internal temp of the pork. Porks internal temperature should range from 145 (medium rare) to 160 (medium)
🥫Storage
Refrigerate: place leftover pork tenderloin in an airtight container in the fridge up to 4 days.
Freeze: freeze pork in an airtight freezer safe storage container up to 3 months.
To reheat: reheat refrigerated or thawed leftovers in a covered container in a 350 degree oven for 10 minutes, in the air fryer on reheat setting for 5 minutes, or in the microwave for 1-2 minutes until warm.
📖 Variations
- Buy a pork tenderloin that is not pre seasoned and season it with your favorite spices.
- Use chicken stock or vegetable broth in place of beef.
💭 Tips
- Always use a towel when turning the pressure valve to vent to prevent any steam burns from residual steam that may be in the instant pot.
