    Tater Tot Breakfast Casserole is a delicious way to start the day and perfect for weekend brunches.

    This Tater Tot Breakfast Casserole with Sausage is a great breakfast recipe made with sausage, eggs, cheese, and tater tots that get crispy and brown on top. It is a cheesy comfort food your family will look forward.

    I like to serve this tater tot casserole recipe on the weekend for brunch. It can be assembled the night before and baked in the morning to save on kitchen time and I love to serve it with a side of fruit and a Bloody Mary (for adults) or Salted Caramel Mocha Latte.

    Easy Breakfast Recipes

    Mornings are always the busiest during the week, so when the weekend gets here its nice to slow things down a bit. That is why I like recipes like this Tater Tot Breakfast Casserole. By prepping the night before, it is ready to go in the oven in the morning and all you need to worry about is when it is finished baking.

    With 20 grams of protein per serving, it is a filling and satisfying morning meal that will keep you going.

    👪 Serving size

    This Tater Tot Casserole Recipe with Sausage makes 8 servings. It is enough to fee a large family and smaller families can always enjoy leftovers the next day. Leftovers can also be stored in the freezer up to 3 months.

    🥘 Ingredients

    Sausage, ground breakfast sausage works best for this recipe. However, you can always make your own breakfast sausage

    Large eggs

    Half & Half

    Garlic Powder

    Salt & Pepper

    Cheddar cheese, preferably a brick of cheese that you can shred yourself.

    Frozen tater tots

    Cooking spray

    Large skillet, I like to use a stainless steel skillet.

    Large mixing bowl

    9 x 13 glass casserole dish, I love this nested set.

    Electric hand mixer

    I use a box cheese grater, it is sturdy and holds the cheese inside the box while grating it.

    🔪 Instructions

    Step 1:

    1. Preheat the oven to 350°. In a large skillet over medium heat, cook the ground sausage for 7 minutes, or until small pieces are no longer pink and have started to brown.
    2. Drain the grease from the sausage and transfer the sausage from the skillet to a 9x13 glass baking dish coated with cooking spray. 
    3. Spread the sausage in an even layer over the bottom of the baking dish using a spoon.

    Step 2:

    1. In a large mixing bowl using an electric hand mixer, mix the eggs, half and half, garlic powder, salt, and pepper until well combined. 
    2. Pour the egg mixture over the sausage in the baking dish. Top with the shredded cheese.
    3. Place frozen tater tots evenly over the top of the sausage, egg, and cheese mixture. Do not submerge the tater tots into the egg mixture.
    4. Bake for 50 minutes, or until a knife inserted in the center of the casserole comes out clean. 
    5. Allow to sit for 5 minutes before serving.
    Clear glass dish with the frozen tater tots on top of the casserole ingredients before baking.

    ⏲️ Baking time

    This recipe for Tater Tot Breakfast Casserole bakes in the oven for 50 minutes at 350 degrees.

    Alternatively, this casserole recipe can be made in the slow cooker. Just assemble as directed for oven baking and then cook on low for 6-8 hours or high for 2-½ to 3 hours.

    💭 Top Tips

    • Be sure to drain as much of the fat as possible from the sausage to prevent a greasy dish.
    • Rinse the cooked sausage in a colander under very hot water if you want to be super diligent about removing fat.
    • Choose a lower fat cheese to cut the fat content as well.

    📖 Variations

    • Substitute cooked and chopped ham or bacon for the sausage.
    • Add ½ cup each diced onion, red and green bell pepper to the sausage mixture while it is cooking.
    • Add
    • Substitute pepper jack or feta cheese for the cheddar for a different flavor profile.

    Ingredients
      

    • 1 lb ground breakfast sausage
    • 8 large eggs
    • ¾ cup half and half
    • 1 teaspoon garlic powder
    • 1 teaspoon black pepper
    • ½ teaspoon salt
    • 1 cup shredded cheddar cheese
    • 1 lb frozen tater tots

    Instructions
     

    • Preheat the oven to 350°.
