    Strawberry Stuffed French Toast

    Delicious and easy french toast recipe with a strawberry ricotta filling.

    Strawberry Stuffed French Toast is made with a ricotta cheese and strawberry filling between two golden egg battered bread slices. It is a delicious and hearty meal that makes the perfect weekend breakfast or brunch.

    This Strawberry Stuffed French Toast is my go to weekend breakfast recipe when I'm not making homemade cinnamon rolls! This is super quick and easy to make and it looks spectacular as well as makes the family feel special.

    Extra Special Breakfast

    The first time I ever made stuffed french toast was at the request of a friend who was going to have guests in their home for the weekend. Back then I made a cream cheese mixture and sandwiched it between bread before dipping in the batter and frying. Similar to these Cheesecake Stuffed French Toast Sliders.

    When I decided to make this recipe to share, I decided that I wanted a less messy way of making stuffed french toast. Frying the french toast first, and they putting the cheese and strawberry filling in between two pieces of french toast seemed to be easier and far less work as well!

    🥘 Ingredients

    1 loaf of bread (not pre sliced, see tips below)

    Eggs

    Milk

    Cinnamon

    Vanilla extract, this is my favorite brand and its high on the affordability level for extract.

    Ricotta Cheese, I highly recommend full fat ricotta cheese for this recipe.

    Powdered Sugar

    Strawberry Stuffed French Toast assembled and cut in half so you can see the ricotta cheese and strawberry filling sprinkled with powdered sugar and served with a sliced strawberry to the left of the toast.

    🍽 Equipment

    Griddle pan, I love this one, you can get 4 pieces of french toast on it at the same time.

    Hand Whisk, this is the best hand whisk, I've had mine for well over 30 years!

    🔪 Instructions

    Step 1:

    1. Add the ricotta, ½ cup milk, strawberries, honey, and nuts to a medium sized mixing bowl and stir to combine. Set aside.
    2. In a large bowl or pie plate, whisk together the eggs with 1 cup of milk, cinnamon, and vanilla.

    Step 2:

    1. Place on the hot griddle and allow to melt. Place the bread in the egg mixture, turning it over once to coat. Then place it in the hot pan. Repeat.
    2. Cook each slice of french toast for 2 minutes per side, or until a golden brown crust is formed. Remove from the pan.

    Step 3:

    1. Divide the strawberry mixture between 4 slices of toast, spreading to coat. Top with another slice to make a sandwich. Serve with a dusting of powdered sugar or maple syrup.

    💭 Top tip

    • Use a pie plate to whisk the egg batter in. When dipping the bread into the batter, the plate is wide enough to take the whole piece of bread.
    • Whisk the egg batter in between dipping the bread to keep the cinnamon incorporated into the batter.
    • Prepare this meal ahead of time, make a large batch of french toast and keep it in the freezer. When ready to serve, mix together the filling and reheat the french toast in the toaster or microwave.
    • Use a firm bread, preferably one you buy as a whole loaf. Some good choices are challah, brioche, or French bread.

    📖 Variations

    • Substitute blueberries, peaches, or raspberries for the strawberries.
    • Use cream cheese or mascarpone instead of ricotta cheese.
    • Skip the strawberries and mix some berry rhubarb jam in with the ricotta cheese, then top the french toast with strawberries mixed with some of the jam.

    Ingredients
      

    • 1 cup ricotta cheese
    • ¼ cup milk
    • 2 cups strawberries sliced
    • 2 tablespoon honey
    • 1 tablespoon butter
    • 2 large eggs
    • 1 cup milk
    • ¼ teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • 8 slices bread
    • ½ tbsp powdered sugar

    Instructions
     

    • Add the ricotta, ½ cup milk, strawberries, honey, and nuts to a medium sized mixing bowl and stir to combine. Set aside.
