    Grilled Stuffed Burritos - Better than Takeout

    This Grilled Stuffed Burrito is a heart meal with all the flavors of the popular grilled stuffed burrito at Taco Bell, only better! Made with homemade refried beans, Spanish rice, guacamole, and pico de gallo, this is a recipe that you will feel good about feeding to your family.

    Grilled Stuffed Burritos are a great lunch idea or light dinner with Mexican food flair. They are delicious, easy to make, and super filling.

    When You Want To Skip The Takeout

    If you are like us, you are likely someone who wants to be self surviving and not have to rely on other people to have the means to make your own meals. Self-sustaining is important to us and we are working our way into it as much as possible. That is why I made every ingredient (except the burrito wrap) that goes into this recipe from scratch.

    The year 2020 has shown us that we can live without and we can make means with what we have. Sometimes, we have no choice but to do so. After all of our life, living a life of ease, we realized that we were too reliant on everything convenient to us.

    We had already stopped eating out for the most part, with the occasional meal out when we were travelling. Now, with social distancing being in place, we eat out most never. With our youngest son and his wife living with us, we are even more determined to become self sustaining. And to skip the take out.

    What You Need To Make Grilled Stuffed Burritos

    Burrito Sized Tortillas. Sure, I could have made my own homemade flour tortilla, but on this day we didn't. Instead, the one and only thing we bought that was a major component of this recipe was the burrito sized tortilla.

    Homemade Taco Seasoning. This is the only seasoning I use for taco flavor. As a matter of fact, I had my dad make it when I saw him last and he said he will never buy taco seasoning again!

    Ground Beef

    Pico de Gallo. Sure, you could buy salsa, but why buy it when you can make it fresh yourself right at home? After all, fresh is best!

    Homemade Refried Beans are another component that you could easily buy in a can at the grocery store. But, why do that when you can make your own? The satisfaction of doing just that is enough to just do it!

    Homemade Guacamole made with only fresh delicious ingredients. 

    Cast Iron Skillet. I know this is called grilled, but to be honest, it is grilled on a cooktop, not an actual grill. I love to use this cast iron skillet to grill the burrito because it is an even heat that doesn't burn (as long as you don't have it too hot!)

    Rolling The Burrito

    When rolling a burrito, you want to make sure that you have all the ingredients tucked in nice and tight. There is no room for seepage, so sure when you are adding the fillings that you really do measure them. Too many ingredients will make it hard for you to roll the burrito without some of it squishing out.

    When rolling a burrito, the number one thing you do not want to do is put the filling in the center. Rather, put the filling on the side closest to you, leaving about an inch to inch and a half from the edge. 

    Next fold the sides over, then the side closest to you will roll up and over the filling. Tuck the sides in as you continue to roll until you get to the other side. By this time, the filling should be completely enclosed and you are ready cook the grilled stuffed burrito in a skillet.

    Tips And Substitutions

    • If the fillings for the grilled stuffed burrito are cold, be sure to warm them up in the microwave before adding to the burrito. This will ensure the filling is hot after it has been grilled.
    • Use a burrito-sized tortilla and to make sure it is easy to handle, microwave it for 10 seconds to make it soft.
    • If you want an extra level of flavor on the burrito, use salted butter to grill it with. Just be sure the skillet is not to hot as you won't want to burn the butter.
    • If you want a completely vegetarian grilled stuffed burrito, leave out the taco meat and double up on the refried beans.
    • Substitute ground turkey or venison for the ground beef for a leaner meat choice.
    • Leave out the spanish rice and just add some regular cooked rice.

    Ingredients
      

    • 8 large burrito-size flour tortillas
    • 1 lb Ground Beef
    • 2 tablespoons Homemade Taco Seasoning
    • 2 cups Spanish Rice
    • ½ cup Pico de Gallo
    • ½ cup Refried Beans
    • ½ cup Guacamole
    • 16 oz shredded Mexican cheese blend
    • Sour Cream optional
    • Hot Sauce optional
    • 2 tablespoons Olive oil

    Instructions
