What Is Haddock
Haddock is a lean, white, saltwater fish usually found in the North Atlantic Ocean. It is very similar to cod (it is actually a member of the cod family). This firm white fish is very mild in flavor and delicate and flaky texture.
Haddock pairs well with many flavors. My favorites being a squeeze of lemon juice and these pan roasted tomatoes, a side of tartar sauce, dill sauce, or cocktail sauce.

- Preheat the oven to 450. In a food processor, pulse the bread, parsley, and thyme to combine and break down into coarse crumbs.
- Place the fish on a foil lined baking sheet. Spread the butter over top of the fish and season with the salt and pepper.
- Sprinkle the bread crumb topping over top of the fish. Bake for 20 minutes. Serve with lemon (if using).

💭 Top Tips for Buying Fish
- Look for a fillet that is firm, the more firm the fillet is, the fresher it will be.
- The fillets should be bright white and translucent
- If buying frozen fish, make sure the packaging is shrink wrapped and secure, avoiding any packages with ice crystals. That would be a sign of air getting into the package.
- I like to choose frozen packages that are at the back of the freezer since they aren't exposed to the temperature fluctuation as much as packages in the front.

Haddock can be baked, fried, or smoked. I even remember my mom poaching haddock in a milk and butter bath (so good!). Today's recipe is oven baked with a simple crumb topping and really, that is all you need with this delicious protein.

Large baking sheet, I like to use a rimmed baking sheet.
Parchment paper (recommended), but alumunium foil can be used in a pinch (but I personally am trying to move away from using this). Or, use a non-stick silpat.
I use a Food processor for breaking down the bread crumbs. A heavy duty blender will work also.
📖 Variations
- Make this a low carb recipe and substitute crushed pork rinds for the bread crumbs.
- Use lime instead of lemon juice and zest.
- Substitute the butter with mayonnaise.
- Cook the fish in the air fryer. Cut it into individual portions and place on the air fryer trays, add the toppings and cook for 12 minutes, or until fish flakes easily.
- Substitute cod fillets for the haddock.
