Fresh strawberries, choose the freshest bright red berries possible. I love to buy mine at fruit stands in the summer to get the just picked berry during strawberry season.
Sugar, to sweeten the syrup
Strawberry extract, to boost the flavor of the syrup.
Water
🔪 Instructions
- Place the strawberries, sugar, and water in a medium saucepan over medium heat. Bring to a boil and then reduce heat to simmer using a potato masher to break the berries down as they cook. Simmer over low heat for 15 minutes, or until the berries are mushy and sauce has thickened slightly. Stir in the strawberry extract.
- Strain the syrup using a fine mesh sieve into a small bowl, being sure to press with the back of a spoon to get all the juice without any of the fruit pulp.
- Transfer the syrup to an airtight container and allow to cool completely. Store in the refrigerator.

💭 Tips
Use the rounded end of a wooden citrus reamer to easily press the strawberry syrup through the sieve.
Save the pulp from the sieve and spread it on toast or enjoy it in oatmeal.
