This Air Fryer Butternut Squash recipe is a great side dish recipe perfect for the holiday season. One of my favorite recipes, with it's browned sage butter, it is a combination of nutty, savory, sweet flavor.

🥘 Ingredients
Whole Butternut squash: I buy the a medium butternut squash, peel it, remove the seeds from the inside of the squash, then cut into 1-inch cubes.
Salt and black pepper: used to season the squash while cooking
Olive oil cooking spray: to coat the raw squash before seasoning
Salted butter: is melted and browned to toss over the cooked squash.
Fresh sage leaves
🔪 Instructions
- Place diced butternut squash pieces in a a large bowl. Coat with a little olive oil spray and season with salt and pepper, toss to coat
- Arrange squash cubes in a single layer on air fryer trays.
- Place trays in air fryer and air fry butternut squash for 10 minutes. Rotate trays and return to air fryer for 10 minutes more, or until squash is fork tender and lightly browned.
- In a small saucepan over medium-high heat, heat butter until bubbly. Reduce heat to low and add sage leaves. Cook for 30 seconds, until butter is browned and sage is crispy.
- Transfer the cooked butternut squash to the saucepan with the browned butter and sage. Toss to coat.

Store leftovers in an airtight container in the fridge up to 4 days.
📖 Variations
- Once roasted, toss with a tablespoon of maple syrup or brown sugar with the browned butter (omit the sage).
- If desired, add ½ teaspoon garlic powder with the salt and pepper.
💭 Tips
- I highly recommend using an air fryer with trays rather than a basket air fryer. One whole squash can be cooked in an air fryer with a 3 tray capacity in single layers. However you cannot fit all of the squash in a single layer in an air fryer basket.
- Save a little bit of time and buy pre-cut butternut squash from the grocery store.
