    This cookie recipe is a copycat for Little Debbie's Star Crunch Cookies. My sweet tooth loves the creamy milk chocolate and gooey caramel flavor with the crisp rice crunch in this sweet treat!

    Perfect treat: these chewy cookies are a great snack or lunch box treat for the family.

    Easy recipe: homemade star crunch is are no bake cookies made right in the microwave!

    Simple ingredients: these no bake cookies are made with just a few basic ingredients and no artificial flavors!

    Ingredients for Star Crunch Cookies.
    You need just a few simple ingredients to make this copycat star crunch cookie!
    Chocolate, caramel, and butter in measuring glass.
    The microwave method is the easiest way to make these cookies!
    Marshmallows in a large measuring cup.
    Marshmallows will need to be melted in 30 second intervals.
    Rice Krispies added to chocolate caramel mixture.
    I always use Kellogg's brand because I think their rice crispy is firmer and crunchier.

    🥘 Ingredients

    Salted butter: for flavor and be sure it is salted as there is no salt added to the recipe.

    Chocolate chips: milk chocolate chips are my go to but feel free to use either semi-sweet chocolate or dark chocolate.

    Caramel bits: Kraft makes little caramel chips that work perfectly for this recipe as they are small and melt easily.

    Mini-marshmallows: I prefer Kraft brand for the marshmallows as well.

    Rice krispies cereal: not all crispy rice cereal is the same. I recommend Kellogg's over any other brand or no name brand.

    🔪 Instructions

    1. Add the butter, chocolate chips, and caramel bits to a large microwave safe bowl. Microwave at 50% power for 1 minute.
    2. Stir the mixture and microwave for another 30 seconds at 50% until melted and creamy.
    3. Add the marshmallows and microwave for 30 seconds at a time until smooth, stirring after every 30 second interval.
    4. Stir in the the rice cereal and mix until the cereal is fully coated.
    5. Using a ¼ measuring cup, scoop the mixture and roll it into a ball.
    6. Place rolled the ball on parchment paper and compress it with your hand or the flat side of a measuring cup.
    7. Let cookies sit until firm.

    🥄 Equipment

    Baking sheet

    Parchment paper or silpat mat; lines the cookie scoop and allows easy release of the cookie once the chocolate has hardened.

    Cookie scoop: I like to use a cookie scoop because of the release handle, feel free to measure ¼ cup scoops with a regular measuring cup if desired.

    🥫Storage

    Room temperature: cookies can be store at room temperature up to 3 days.

    Refrigerate: store cookies in an airtight container in the fridge up to 1 week.

    Freeze: store in an airtight freezer safe container up to 3 months.

    📖 Variations

    • Go with whatever type of chip your taste buds desire! You can substitute white chocolate, cinnamon chips, caramel chips, peanut butter chips, or caramel chips!
    • Can't find the caramel bits? No problem, just use 24 kraft caramels in their place!

    💭 Tips

    • Coat the cookie scoop with non-stick cooking spray to make it easier to release the cookie from the scoop.
    • Wrap the cookies individually in airtight baggies to ship off in lunch boxes.

    🍳Stovetop method

    If you don't have a microwave you can still make these cookies right on the stovetop! Use a large pot over medium heat and follow the steps for adding the ingredients. After each ingredient is melted, move to the next step. This takes more time and patience, and you do need to watch the pot constantly to make sure nothing is scorching or burning.

    Did you know the actual product has rejects of the Little Debbie Oatmeal Cream Pie in their Star Crunch Cookie which adds to their gooeyness? I heard through the grapevine that someone who used to work at the family bakery and she told me that was part of the secret to the chew in the cookie! If you want to go for that authentic little debbie version, then grind up a couple of oatmeal cream pies and add them to the mix!
