    Homemade Pancake Syrup is made with equal parts brown sugar, and white sugar simmered in water with a touch of maple flavoring. It is delicious everything from french toast to a Sunday morning breakfast of fresh blueberry pancakes!

    Dark brown sugar

    Granulated sugar

    Water

    Maple extract

    A bowl of brown sugar, bowl of white sugar, and bowl with maple extract.
    Just 3 simple ingredients make this tasty pancake syrup!

    Make sure sugar is dissolved between additions to prevent crystallization.

    Simmer the pancake syrup for at least 5 minutes, longer if you want thicker syrup.

    🔪 Instructions

    1. In a small sauce pan over medium-high heat, bring water to a boil.
    2. Reduce to medium heat and add granulated sugar to the water and stir constantly until fully dissolved.
    3. Add dark brown sugar to the saucepan and stir constantly until fully dissolved.
    4. Stir syrup constantly, and until syrup boils. Reduce heat to low and simmer for 5 minutes.
    5. Stir in maple extract. Serve warm or store for later use.

    • Make it butter syrup like Mrs. Butterworth syrup and add ¼ cup unsalted butter after step 3 to make a buttery pancake syrup.
    • If you are not a fan of the maple flavor, use vanilla extract in place of the maple.
    • For a lighter flavor, use light brown sugar or coconut sugar in place of dark brown sugar.

    💭 Tips

    • Be patient and make sure the sugars have completely dissolved before finishing the recipe.
    • Be sure the syrup simmer, not boils, for the cooking time. Boiling the sugar can cause it to harden instead of staying syrupy.
    • For a thicker syrup, continue to simmer for 10 more minutes. Be aware that the volume of syrup will reduce as it simmers to thicken.

    I am a pure maple syrup girl. I grew up with it and continue to use it to this day. This pancake syrup is not like pure maple syrup, as nothing can really compare when it comes to the real thing. However, in a pinch, or if you are just not a fan of the real thing, this syrup is a good substitute.

    • 2 teaspoons maple extract

    • Return heat to medium-high and stir syrup constantly until syrup boils.

    Notes

    This is a very basic simple syrup recipe and was tested it many times and this method to make homemade syrup has proven not to crystallize. Crystallization occurs when sugars do not completely dissolve and the instructions involve constant stirring until sugars have completely dissolved. If there are any granules of sugar that do not dissolve, the sugar molecules will begin to attract other molecules and form crystals.
