    This Bacon Tomato Grilled Cheese Sandwich is so delicious! It is made with an artisan bread, thick cut crispy bacon, and heirloom tomatoes. It takes the freshness of summer tomatoes to a new level and is an easy sandwich recipe your entire family will love.

    Bacon Tomato Grilled Cheese is a great lunch or dinner idea next to a bowl of tomato soup, but it can also be served next to a fried egg along with a Bloody Mary for brunch.

    Bacon Tomato Grilled Cheese - The Best Comfort Food

    I am a huge fan of texture and flavor in my food. When it comes right down to it, that is what makes comfort food what it is. This bacon grilled cheese sandwich is packed full of crispy salty thick cut bacon and creamy melted cheese. The buttery grilled bread adds another layer of flavor and crunch and the freshness of the tomatoes spells summer.

    The mouthfeel of this grilled cheese sandwich is another quality of comfort food. And, like most comfort food, It is not low in calories. But, it is worth a once in a while treat when you feel the need for comfort!

    What You Need To Make Bacon Tomato Grilled Cheese Sandwiches

    Artisan bread, my favorite type is a tuscan pane, either unflavored or flavored with rosemary.

    A good quality bacon, I prefer a thick cut bacon for more flavor and crunch to the sandwich.

    A good quality grill pan, I love this one to also achieve the grill marks on my grilled cheese sandwiches.

    Tips and Ingredient Substitutions

    • Use a sturdy bread that will hold up well to the filling. Tomatoes can be wet, so you want a bread that will not come apart easily.
    • Slice the tomatoes and lay them out on a paper towel for about 10 minutes before assembling the sandwiches. This will help remove extra moisture that could make the sandwich soggy.
    • Cook the grilled cheese sandwich over a low heat to prevent the bread from browning to quickly. You want the cheese to melt and still have a golden grilled sandwich.
    • Use a sandwich press or mini cast iron skillet to press the sandwich together. This allows the heat to conduct through the sandwich and melts the cheese.
    • Add some caramelized onions to the sandwich.
    • Swap out the bacon for some taco meat.
    • Use mayonnaise instead of butter to spread over the side of the sandwich that will be grilled.

    Ingredients
      

    • 8 slices thick cut bacon cooked
    • 8 slices artisan bread
    • 2 large heirloom tomatoes cut into 8 slices
    • 4 tablespoon mayonnaise
    • 4 ounces smoked jack cheese grated
    • 4 ounces swiss cheese grated
    • 2 scallions thinly sliced
    • maldon salt (optional)

    Instructions
     

    • Spread ½ tablespoon of mayonnaise over one side of each slice of bread.
      Using a knife to spread mayonnaise on the bread.
    • Place ¼ cup of cheese on the bottom slice of bread. Next, add 1 slice of the bacon and top with 1 tablespoon of cheese. Layer two tomato slices on top of the cheese and top with 1 more tablespoon of cheese. Top with 1 more bacon slice and 2 more tablespoons of cheese. Repeat this step for all 4 sandwiches.
    • Place the sandwich on the grill and cover with the second slice of bread. Cook on medium low for 3 minutes, or until sandwich is golden on the bottom and the cheese is melting.

    • Flip the sandwich and cook for another 3 minutes, or until golden brown and cheese has melted. Press the sandwich with a small heavy cast iron pan if needed to aid in the cheese melting.
