    Bacon Egg Salad Sandwich Filling is delicious with cooked crispy bites of smoky bacon crumbled and stirred into the egg salad mixture. This makes a delicious sandwich for lunch and is even easier to throw together if you have leftover bacon and hard boiled eggs from breakfast!

    Bacon makes everything better, and you don't need a lot for it to boost the deliciousness of a recipe. Don't you agree?

    🥓 Naturally Low Carb Keto

    Bacon Egg Salad is naturally low carb keto but can be enjoyed by all no matter what diet you follow. If your keto, it is excellent on a homemade keto slider roll or wrapped up in a romaine lettuce leaf. If your not keto, enjoy it on bread or these delicious hamburger buns! It is naturally low carb and the only difference is the vessel it is served in.

    Bread

    Hard boiled eggs

    Bacon

    Mayonnaise, if keto, be sure to use a keto friendly mayo.

    Yellow mustard

    Green Onion (scallion)

    Smoked Paprika

    🍽 Equipment

    Food chopper, I use this hand food chopper a nd have had it for years. My mother has used the same thing for as long as I can remember. It's the best!

    🔪 Instructions

    Step 1:

    1. Place the hard boiled eggs in a large mixing bowl. Using a hand chopper, chop the eggs into small pieces. Set aside.
    2. Add the mayonnaise, mustard, green onion, bacon, and smoked paprika to the hard boiled eggs. Mix to combine.

    Step 2:

    1. Serve on your choice of bread with lettuce and tomato (if using).
    Partially assembled sandwich with bread on the bottom, then egg salad, topped with green lettuce and a red heirloom tomato on a cream colored plate.

    💭 Top Tips

    • Cook extra bacon for breakfast and save some to make the egg salad.
    • Buy pre-cooked bacon and cook just enough for the recipe.
    • To prevent soggy bacon, don't stir the bacon into the egg salad until it is time to assemble the sandwich.

    📖 Variations

    • Add ¼ cup chopped green olives to the bacon egg salad mixture.
    • Make it a bacon, egg, and cheese salad and add ¼ cup of shredded cheddar cheese to the filling.
    • Stir in 1 tablespoon horseradish for a little zip.
    • Use chipotle mayonnaise in place of regular.
    • Chop 1 tablespoon of fresh dill and stir into the egg salad.
    Fully assembled sandwich cut in half and stacked with the filling side out to see the sandwich layers.

    Ingredients
      

    • 8 large hard boiled eggs
    • ½ cup mayonnaise
    • ½ tablespoon yellow mustard
    • 4 slices thick cut bacon crumbled
    • 1 green onion thinly sliced, both white and green parts
    • ¼ teaspoon smoked paprika

    Instructions
     

    • Place the hard boiled eggs in a large mixing bowl. Using a hand chopper, chop the eggs into small pieces. Set aside.
    • Add the mayonnaise, mustard, green onion, bacon, and smoked paprika to the hard boiled eggs. Mix to combine.
    • Serve as desired.
